Herb Vinegar

My friend Robair, sometimes know as There's a Fungus Among Us, has requested I tell how I used to make herb vinegars.
When I was a teenager I took over a small patch of garden next to my parent's driveway to put in an herb garden.  Then I had to figure out what to do with it all.
I started out with a gallon jug of vinegar.  I don't think it matters what kind of vinegar.  I shoved in all of last years leftover dried herb.  By this time the new crop of say thyme was ready for harvest so I wanted to get rid of the old stuff.  Once I filled the jug as much as I could I set it in the sun on the front porch like sun tea.  Later I decanted it and strained it into pretty wine bottles that I had saved and cleaned.  Pick a fresh sprig of whatever herb you are using and suspend it in the vinegar in the pretty bottle.  Cork them and they are ready for gifts.  This is really easy and people always like the vinegars for salad dressing.
